Small plates are not an excuse to make twelve things. They are a way to create an evening with movement: a plate lands, someone refills a glass, the conversation rearranges itself.
Choose five dishes: bread and dip, one warm vegetable, one protein, one crisp salad, and one sweet or salty finish. Serve them in two waves rather than all at once.

Timing
A little rhythm goes a long way.
- Day before
- Make dip, dressings, and any marinated component.
- 1 hour before
- Set out the cold first wave and prep warm dishes.
- Arrival
- Serve bread, dip, and the first glass.
- 45 minutes later
- Bring out warm dishes and the salad together.
