Method

Toss apples and sugar in a nonreactive bowl, cover, and refrigerate for 4 hours or overnight.

Strain the syrup through a fine sieve, pressing gently.

Stir in cider vinegar, bottle, and refrigerate.
Happiest note
Use a crisp apple with acidity. Mealy apples make a syrup that tastes flat before the vinegar even arrives.
